For the Yellow Rice:
- 1 cup long-grain white rice
- 1¾ cups chicken or vegetable broth
- ½ tsp turmeric powder
- ¼ tsp cumin powder
- 1 tbsp olive oil
- Salt, to taste
👩🍳 Instructions
1. Make the Yellow Rice:
- Heat 1 tbsp olive oil in a medium saucepan over medium heat.
- Stir in the rice, turmeric, cumin, and a pinch of salt. Toast for 2–3 minutes until fragrant.
- Add broth, bring to a boil, then reduce heat to low. Cover and simmer for 15–20 minutes until the liquid is absorbed.
- Fluff with a fork and keep warm.
2. Sauté the Veggies:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
